Since 2006, we've been producing delicious, healthy birch syrup from a beautiful stand of white birch near Thunder Bay, Ontario, Canada. 
Our syrup is prized by chefs across the country and savoured at home by thousands of customers. Birch syrup is completely different from its ubiquitous cousin, maple. It's much darker in colour compared to maple and has a bold, almost savoury flavour. 
Production of birch syrup is similar to maple in that the trees are tapped in spring and the sap is boiled in an evaporator. The big difference is that maple sap is much sweeter and 40 litres of it is required to produce 1 litre of syrup. With birch, over 100 litres of sap are needed to produce 1 litre of syrup.
